You could give it a less sweet frosting (coconut) or a less sweet bottom crust (graham crackers) to reduce the sweetness.
That is how I like my fudge. You can keep the gooey stuff, give me penuche.

I passed your tips along to my wife. I agree with you--I liked the penuche
much more than most types of fudge that I've had.
Also, thanks for the reminder about guanti. Up in Rhode Island, they are
still a staple at weddings. I rememeber when I was a kid, my mother and her
sisters would prepare them by the basket full in preparation for a
