FYI - New York State conducted state census in 1855, 1865, 1875, 1892. Some areas also had 1825, 1835 and 1845 census done. LDS library has microfilms.....search under New York, then New York Census, than scroll to end, adn you will find Wayne County, films from the county. "Index by town 1860, 1865, 1870, 1875, 1880 FHL US/CAN Film 813650 Items 4-8" Hope you find something here.
