Hi, with a view to helping you, I looked at the transcriptions of baptisms for Breage, firstly for the period 1741-1750, to try to find your William SYMONS without success, what I did find is a William SYMONDS (the spelling of my surname) who was baptised 1745/6 to parents William and Mary. Do you think this could be your William?
If your William's parents had different first names, then please let me know and I can search again.
In the 1741-1750 period, there were baptisms for 7 x SYMONS versus 10 x S

I have a William Simmons who was born about 1766 at St.Breage. He married a
Bridget Trezize at Breage on the 25th December 1791. His daughter Ann was my
GGGgrandmother. Her son, Absalom, was born out of wedlock in 1828 and later
he assumed the surname of Semmens which continues to this day. Ann was
baptised at Germoe in 1792. Absalom and his mother Ann were listed in the
1841 Census as living at Spernon, a village near Trescowe and Trescowe
Common.
