I would start by searching with the National Park Services Soldier Sialor System. http://www.itd.nps.gov/cwss/
The National Archives has microfilmed service records compiled from original rosters, including POW Rolls. While you can order copies from the National Archives orview the microfilm at various locations around the country, the best source for this information is the Confederate Research Center in Hillsboro, TX. http://www.hill-college.cc.tx.us/museum/mainpage/research/research.html
As to your other question, the answer is yes. There were battles fount in Texas during the war. http://americancivilwar.com/statepic/tx.html will give you some information.
