Bread pudding is a favorite in New Orleans and Acadiana. There are as many
variations of bread pudding as there are cheeses in France.
I just finished cooking the following bread pudding to be served tonight at
the "reveillion". To make a smaller amount, reduce the measurements
accordingly.
Custard Bread Pudding With Sliced Almond Crust
Ingredients:
Pudding:
1 loaf of stale French bread
3 sticks butter, melted
12 eggs
4 cups granulated sugar
8 cups milk
2 Tsp. Vanilla
2 Tsp. Nutmeg
2 Tsp. Almond extract
2 Tsp. Brandy or rum extract
Cinnamon sugar for sprinkling on top

Almond Crust Topping:
Ingredients:
2 cups sliced almonds
2 cups sugar
1 stick of butter (melted)
1 tsp almond extract
1 tsp rum or brandy extract

Mix all of the above ingredients and spread evenly on the top of the firm
pudding. Return to the oven and cook until the crust is slightly browned.
