The use of okra owes its origin to the African Americans, as does the name
gumbo (africans call okra gumbo).
The use of gumbo filé owes it's origin to the Native American, as does the
tomato, bell pepper, cayenne pepper, red bean, white bean and pinto bean,
etc., corn, especially "Maquechou" which comes from the French word 'like
cabbage'.
