Would there have been a reason to lie about having been born outside the
U.S.?

Mine did exactly the same thing---1860 census says born Ireland (for my Mary
McConnell born in 1842) and all later census listings say she and the other
children (previously listed as born Ireland) were born in New Jersey. Even
Mary's obituary says she was born in New Jersey.

I'm not sure exactly what changed between 1860 and 1870 -- perhaps merely a
stigma about having been born in Ireland.
