I once did this with two pages of the 1881 FamilySearch census transcription for Canada. I found 17 errors. Legibility of the two original pages was good.

I've not done this myself, so I'm not sure how accurate you will find the transcription to be. But then I'm not the one relying so heavily on that transcription, and I would think such a test would be useful in evaluating your approach.
