You asked if there was a slaughter house at Sandhurst.
Probably not as you imagine...But several butchering businesses.

James TYSON and his brothers started a business there in 1852 on the
northern side of the Bendigo field on the creek....slaughtering cattle they
had brought down from their properties near Balranald.(this is on the site
of now Tyson's Reef Hotel.)
The business prospered so much that they were able to expand their holdings.
By 1855 they sold out for about 80,000pound a fortune to the Rickettsons.
William TYSON stayed on with a slaughterhouse until at least 1860.
Another of my ancestors Charles LACEY also had a butchering business there
at this period.

Someone may have a copy of a trade directory which would give you a better
idea of the number involed in the trade....there were plenty of mouths to
feed!
