Suggest it could all be to do with how the registrar or enumerator heard the
name and wrote it down.

Gilles, could be like a 'Jules'. Also, remember the lilt of a Scottish rural
accent.

My grandmother was known as Kathy all her life, and even has it on her
gravestone. Her real name as shown on her birth certificate, was Christina
Kitty. She had an elder sister, also called Christina, but she was known as
Chrissie.
