I wonder why people add an 's' to certain surnames. Perhaps it is
only to the one-syllable ones?

I do have a story, though in a different vein. How about this for
coincidence?

I had trained as a registered nurse in England. As you well know
there are differences between American (even Canadian) and
British English.
The first few nights in a Canadian hospital (due to young children I
only worked the night shift), they had me working with another
Canadian RN, so I could receive some orientation. Her last name
also happened to be Head. Before we were to do night rounds I
asked her where certain things were kept. For instance the torch,
flannels and draw mackintoshes*. ( She hadn't been able to place
my accent, which is sort of a mixture; many people thought I was
Dutch. I had already got rid of my Slavic rolling "R" in the 10 yrs in
England.).
She looked at me and said in mock exasperation : "Oh my God, not
another limey, I already have one at home". Not only was her
husband English, but came from the same northern city as my
husband. They were not related, but our respective fathers-in-law
knew one another since they belonged to the same club.

It's a small world !
