Subject: Looking for Whitefish -

On 11/3/03 (6:12:14 PM MST), Larry H. () asked,

"I am trying to find information about "whitefish," the smoked kind normally
found at delis in NYC.

Would like to know the origin of this fish, and its Latin name. Would also
like to know what wood is used for the smoking process."

You've been gone so long, you put whitefish in a deli when it's typically
sold in an appetizing store or in the appetizing department of a supermarket or
possibly in one of those newer bagel bakery stores.

But, if you're going to want a piece of whitefish (would that be a chub or a
large fish), you'll also need some schav (that's a sour grass drink with a
scoop of sour cream, of course) to begin, and a bialy or two and some Greek salad
to accompany the white fish, and then an Enteman's Danish ring to go with the
coffee after you've eaten the white fish.
