Hello Larry,
The basic ingredient of the smoked whitefish you seek is LAKE WHITEFISH
coregonus clupeaformis. This should not be confused with the mountain
whitefish which is found in streams and is often caught by fly
fisherman fishing for trout.
I now live in the NW and it took me over six years to locate a source
of whitefish in the greater Seattle area. The source is a unique and
famous Japanese market in Seattle called Uajamaya's.
Someone recently listed several possible sources of white fish. One of
the numbers had a 360 area code, the same as mine. I tried the number.
The people there sold smoked fish but didn't know what smoked whitefish
are. They suggested Halibut as a "whitefish". I challenge anyone to
find a source of whitefish in the Greator Seattle Area besides
Uajamaya's.
