What island were you on? More than likely it was not a "salmon" fish pattie
you were eating but a "salted cod-fish" pate (we call it salt fish pate
here in the Virgin Islands).
They are sold all over the Caribbean, and the recipe for the filling and
dough vary. My grandmother owns a restaurant where she cooks local foods,
and I learned to make these from her. The filling can be anything from beef
to shrimp, chicken, conch etc.
Let me know if I'm thinking of the right thing and I'll try and scoop up a
recipe for you (I cook our local foods mostly out of my head... as do most
West Indians I guess).

Please don't think this as strange but there were fish patties that I
believe were made of salmon being sold all over. They are very
delicious and made quite spicy. A lovely snack.
