What a pity the student William Hamilton has not turned up in your Census check! Did you find the College in the Census at all? It was in what is now College Road, junction with Job's Well Road, which may in 1851 have been just outside the town of Carmarthen. If you did find the address of the college, this William might have been elsewhere on census day.
Also, I wonder if Carm Record Office have any records of members of the College? I've checked a likely site on the internet - it's now called Trinity College, Carmarthen - but their website carries no mention of the history or origins of the place.

Hamiltons that are mentioned in 1851....

these are the ones I could find from 90,000 entries....

do you think Henry Hamilton the surgeon could have been belonging being as
he was from Ireland too.....
