I agree, the Catholic Church keeps very good records of baptisms, and other things. Luckily, the Catholic Church is also run in a centralized, top-down way. You should be able to find out what churches were in the area at that time and where the old church records are kept by contacting the diocese for that area - usually located in the nearest "large" city. An archivist should be able to help you identify a short list of churches that were operating in the early 1850s and be able to tell you where the records are.
