I think that Acrobat 4.0 (if you have the full version - not just the
viewer) does allow some sort of "capture" of a printing. I have it myself
and remember reading a bit about that, but had not tried it. I wonder if
you can set your default printer to some sort of Adobe Acrobat capture mode
and then as you print Acrobat captures it and converts it to PDF.

I would have to do some more digging through Acrobat's manual to better
understand how to do this. Maybe this will give you an idea of what to look
for.

(I see that someone else who has had more experience than I has already
tried to answer these questions for you.)
