Only two people appear in 1861 Channel Islands census with surnames spelled
LeHuray, Henry (b. 1846) and Margaret (b. 1843). They are both servants of
a family At St. Andrews, Guernsey, and say they were born there as well.

Of the 157 Soundex suggestions, not one is born in Alderney and not one was
named Stephen.

It would appear Stephen's family missed the 1861 Channel Islands Census and
the England census of the same year.
