The first letter was undoubtedly written by John Bunyan Chastain, born 20
February 1807. According to "Pierre Chastain and His Descendants," Volume
1:

"By 1833, John and his family were living in Union County, Georgia. He
served in the Georgia House of Representatives from Union County in 1833,
1850, 1851 and 1852. He was in the Georgia Senate in 1835. They lived in
Union County, Georgia in 1850 and Fannin County, Georgia in 1860 at
Pierceville. John Bunyan Chastain was a lawyer. He served in Florida War
as a Captain in General Nelson's Brigade."

I'm not sure about the letter signed J. C. Chastain, however the third
letter is no doubt signed by Elijah Webb Chastain (see my other email
concerning letters).
