The official currency of the European Union is the Euro. However, in each
country, their currency is typically used by the populace. The EU can be used
in every country of the Union in lieu of that countries currency. The
convenience comes when money acquired in one country (the EU) can be used in any of
the others. It is little back woods towns, villages, etc that might be reticent
to take anything but the 'local' currency.

My cousin in the Czech Republic leads vacation 'tours' to Croatia from the
Czech Republic. She takes their koruna and converts them into EU's while still
in the CR so that she can pay for whatever they need currency for when they
are in Croatia. No money 'exchange' additional is required, and the bills get
paid without problem.
