This one came in from a reader down Mexico way:-


"This Cumbrian Rum Butter recipe looks somewhat similar to our Tequila
Spread:


1lb (1/2 kilo) Brown Sugar
1/2 lb. (250gm) butter
1 fifth of Jose Cuervo Gold
1/2 nutmeg
Flour tortillas


Sample the tequila to check for quality. Take a large bowl. Check the
tequila again. To be sure it is the highest quality, pour one level cup
and
drink. Repeat.

Melt the butter in some gentle heat. Place the sugar in a large fluffy
bowl.
Be sure the nutmeg is fairly grounded. Add the nutleg to the sugar and
stir
again. Make sure the tequila is still okay. Cry another tup. Turn off
the
fire under the butter. Scrape the butter out of the pot and add to
sugar. If
the butter gets stuck in the pot, pry it loose with a drewscriver.
Sample
the tequila to check for tonsisticity. Next, sift two cups of salt. Or
something. Who cares? Check the tequila. Don't add the salt, its for the

Margaritas. Stir well until fairly firm. Add tequila and continue to
stiff
until stir. If it won't get stiff, add that salt. Place in a jar or dish
and
allow to set. Spread over tortillas. Enjoy."
