According to the Texas Birth Index, 1903-1997, your grandfather's name was
William Roscoe Whitehead. I found 2 death records in Texas for a William
Roscoe Whitehead. One died in Dallas County in 1990, and one died in Gregg
County in 1984. It might be worth your while to check both of these out.
Lillian Charline may be listed as his widow in the record.

Also, have you tried to find a marriage record for William Roscoe Whitehead
and Lillian Charline Jones in Dallas County? Circa 1946.

With these death records, you could also try to get obits for these persons.

By the way, I couldn't find your father in the SSDI. You mentioned that he
died in 2004.

Did your father ever mention any aunts or uncles on either side of the
family? Any names might be a clue to find his parents.
