On the topic of local archives, do you know which local archive in Denmark
that would cover the Horsens region? Mainly interested in the Korning,
Hatting, Tyrsted, and Torsted parishes?

Hey there,
My suggestion is you contact the local archive in the area, providing names,
ages and places. Nørre Højrup is the mordern spelling of the town / parish.
The number is just the number in that years census - in the next census, it
may have been 7, but if you give them names et cetera, the archive may be
able to give you more details.
I think this is the archive which cover Nørre Højrup:

Write to them in English - it shouldn't be a problem. If it's not the
correct archive, they'll be able to help you get in touch with the correct
place, but I'm fairly sure it's the correct archive.
I have a digital map (1:50.000), so if your mail can handle a file of about
½ MB, I'd be happy to send it to you. It shows some of the farms in the
area.
