I remember making those in school back in Denmark in the mid 1960's. I'm sure my Mother has a recipe that is older.

Rather than me translating (and converting measures/ingredients) a Danish
recipe - I post a recipe from the 'Danish Cook Book' we purchased in Solvang
(California) in 1965.

2 cups Buttermilk
2 cups Flour
2 Eggs
2 teaspoons Baking Powder
½ teaspoon Salt
½ teaspoon Soda
2 tablespoons Sugar
4 teaspoons Melted Butter.
Separate the eggs and beat the whites stiff.
Mix all the ingredients together at one time and beat until smooth.
Fold in the egg whites last.
Put about a tablespoon of vegetable oil or shortening in the bottom of each
hot Æbleskive Pan cups.
Pour in about 2 tablespoonfuls of the batter into each cup and as soon as
they get bubbly around the edges, turn quickly - Danish cooks like to use a
long knitting needle for this.
Continue cooking, turning the balls to keep them from burning, until the
knitting needle comes out clean when stuck in the centre.
Serve while hot, with syrup (Canadian Maple Syrup is great) jam or powdered
sugar. "Runny" Honey is also to be recommended!

My wife -- who is Danish born -- use this recipe -- and she makes 'em just
as good as my mother did!

PS: There is a picture of the pan in the book -- 7 holes -- as has our cast
iron one --- the same we purchased in Solvang in 1965 ---- and we even used
when we lived in Denmark!!
