Interesting Rose Mary,
My dad was fascinated with the outdoor over wood cooking also. He built
brick outdoor fireplaces at both the home I grew up in as a child - and he
liked his stuff "smoked", so I wasn't sure if cured was the word or not, but
I did know it wasn't raw - but I will never convince my other half of that.
I do think the best part was the dripping fat when you did heat it
up....what can you say, my dad's 96 years old and healthier than those that
wouldn't touch the stuff!
