Hi Helen
This Lewis extract below from the Abergwili Genuki page might help re the
local quarrying angle.
I've read that bricks and lead were exported through Carmarthen quay at one
time, and there was a brick works in the town(next to the Station) but I
imaginethe town's trade catchment area was quite large as far as sources of
raw material were concerned.
I can't see any reference to Pencommins in the indexes any of my CMN history
books , or
on any map, inc Speed's of 1610.
I had to smile when a google search on Pencommins just threw up your own
site plus the original list query on the Rootsweb archive :-)

"ABERGUILLY (ABER-GWILI), a parish, in the union of CARMARTHEN, higher
division of the hundred of ELVET . . 2 miles (E. by N.) from Carmarthen, on
the road to Llandilo-Vawr; containing 2366 inhabitants. . . The village is

rivers Towy and Guilly, over which last is a neat substantial stone bridge
of three arches. The parish abounds with roofing slate of excellent quality,
of which there are two quarries at present open, affording employment to
