Ordnancy may be a term meaning surveying or map making but I seem to recall
seeing the word in relation to military ordnance (which is a contraction of
ordinance). But, while I'm unable to find it in any of my dictionaries, I
suspect that it refers to ordnance (explosives).

Thank you so much for your help. That confirms Ernest George's occupation
of "Skilled Labourer Naval Ordy Dept." in the 1901 Census (I'd wondered what
"Ordy" meant!).
