Personally I keep all the data in one tree, so no data is duplicated
and split to send data to other people as needed, but to do what you
request the easiest way is to

Create a list with the two people you want to keep.
Then create a query showing all the people in the list.
Then use the query with split tree helper to delete all people not in
the list from a new version of your file.
