All that talk about hush puppies reminds me of a recipe I'm trying to find.
I throw myself at the mercy of the experts out there.
Here's what I'm looking for:
Restaurant in San Antonio TX -- The Brazier at Los Patios. Serves a plate
of little jalapeno cornbread biscuits to every diner while you're waiting
for your lunch/dinner.
They are definitely baked, not deep fried because one side is flat. They
are about two-inches in diameter and about one inch high. They are smoother
on top than the usual drop biscuits that I make. But they are nice and
crunchy on the outside.
I know they have cornmeal (by color and taste) and I know they have bits of
jalapeno (by color and taste). But I don't remember seeing any bits of corn
kernels.
There is a menu for the restaurant posted on line. It says they serve
Jalapeno Cornbread and Butter Biscuits. Does this describe one item or two?
I know I could experiment and probably come up with something similar. But
I would probably gain 50 pounds while experimenting. Would rather try to
find the original recipe.
I live in NJ. Don't know when I'll get to the restaurant again. If I were
there, I'd probably ask if they would share the recipe.
