I would recommend Umbria. For example, Todi or Spoleto. The advantage is
that is simply a wonderful region, the disadvantage is that is far from the
coast and in any case you have not easy connections with other regions. If
you plan to move a lot by car, Tuscany is probably better. Going towards
North makes you easier to move by car, but the climate is worst. Liguria is
another beautiful region, close to Alps and to Sea. A region where you can
eat very well is Emilia-Romagna. In Latium there are several lakes close to
Rome, with a wonderful weather. You have the davantages of big town and
small town at the same time. In the South there are a lot of beautiful
coasts, but the services and infrastructures are poorer. Sicily is a great
region. Taormina is a beautiful small town.

What I recommend is to take one month of vacation to visit Italy. Do not go
in touristic places, but move by car, living in bed & breakfast, to search
YOUR region. Then decide.
