Re clotted cream -- I've heard of it, but don't know what it's like - fresh
or sour? and why is it called clotted? When I lived on our family's dairy
farm and later when we had our own small dairy, we ran milk through a
separator that was set to make the cream so thick it had to be spooned out
of a jar - that was wonderful stuff to have on top of hot chocolate, or
pudding, or fruits.
