According to MacLysaght's book of SURNMAES OF IRELAND:

Lyons although it is an English name, few in Ireland with the name of
Lyons are of "English stock". It is the anglicized version of O'Laighin
or Lyne in Galway and O'Liathain (Lehane) in Cork. It is different from
the Scottish Lyon which it is confused with sometimes.
