Here's a recipe from a book, I havent tried it-
6 boiled potatoes, 2 tablespoons flour, butter, a little salt
Mash the potatoes, and the salt and sufficient flour to make a stiff dough.
Roll out on a board 1/2 in. thick, cut into squares and bake on a griddle.
Split and butter immediately and serve hot.
(a griddle is basically a flat iron plate that was hung over a turf fire)
You could of course fry them on a pan rather than use a griddle
