You won't find very many - it's a tremendous job few companies will
undertake. There are census indexes, but with minimal data recorded and
usually only heads-of-household listed. Check the Heritage Quest,
Ancestry, and FamilyTreeMaker websites.

One I know of for the USA is the 1880 Federal Census published by the LDS
Family History Center.
