Crockpot recipes? Here's one for Chicken Stew
By Ness - none
A friend recently told me she read an article that said that slow cookers &
crock pots are coming back into style. I never knew they went out of style!
As we were discussing crockpot recipes, here's another one my family likes.
Chicken Stew
2 full breasts of boneless, skinless chicken, cut up into about 1" cubes.
1 can of cream of mushroom soup.
1 can of milk.
1 chicken bouillon cube.
1 lb. package of frozen mixed vegetables.
1 very small onion, diced.
1 teaspoon dried parsley flakes (optional).
Salt and pepper to taste.
Cook on low setting for 4-5 hours.
If the mixture cooks up too thick for you, add a little more milk or some
water.
Serve with or over mashed potatoes, biscuits, noodles or rice.
Yum!
Website for crockpot recipes

Here is a nice website with SEVERAL links to crockpot recipe sites.
http://pages.ivillage.com/misc/momof3add/crockpot.html
I did a search on www.askjeeves.com and came up with many sites, not just
this one.
It would still be nice to see if any of us here have our own crockpot recipes
to share. :-)

Crockpot recipes?
By Ness -
Hi Susan,
I also love using my crockpot, and am always looking for good recipes. I like
to use the site www.allrecipes.com. Put in "crockpot" or "slow cooker" under
the "search" feature. I just got a list of about a dozen new recipes from
there. (They also have lots of other good recipes.)
Here's one recipe I use for braciole (Italian stuffed & rolled steak in
sauce) in the crockpot. I just made it last night. It's good along with
cooked spaghetti or pasta (place the rolled steak on top and pour sauce over
everything.)
For the steak, you will need about 1 to 1 1/2 lbs very thinly sliced top
round or family steak, about 1/4" thick. Get at least one very large, wide,
thin piece to stuff & roll up, but if the pieces are smaller, just make
several little roll-ups (but it's a bit trickier). Ask the supermarket
butcher to slice some for you if none is on display.
Use a jar of store-bought spaghetti sauce for the sauce, or your own if you
have some. For instance, a 1 lb. 10 ounce bottle of Ragu sauce is what I used.
Here's what to mix together for the stuffing:
1/4 cup seasoned Italian breadcrumbs.
1/4 cup finely chopped onions.
1/4 cup grated romano/parmesan cheese.
2 cloves chopped/crushed garlic (optional).
Salt & pepper to taste.
You also need several wooden toothpicks, or butcher's string to hold the
rolled steak together.
Pound the steak as flat as you can (it makes the area you can "stuff" larger,
as well as tenderizes the steak). Mix the dry stuffing ingredients and then
spread the mixture all over the pounded flat steak. Roll it all up, like a
jellyroll. Secure with either toothpicks or tie with butcher's string. IF you
have the time, brown the rolled steak in a frying pan with a little oil on
all sides (but it's not absolutely necessary). Place the rolled steak in a
crockpot with a jar of already made spaghetti sauce. Cook on low for about
6-8 hrs. Meat should be very tender when done. Place the cooked roll on a
plate with pasta. Cut or slice into portions if needed.
Hope you enjoy this.
