When the kids were still at home they used to love this rice pudding. It would disappear real fast.

Rice Pudding
3 1/2 cups cooked rice
2 cups milk
2/3 cup sugar
1 tablespoon flour
1/4 teaspoon salt
3 egg yolks slightly beaten
1/2 seedless raisins
2 tablespoons butter or margarine
1 teaspoon vanilla
1 teaspoon nutmeg
1 teaspoon cinnamon
Scald 1 1/2 cups of the milk; save other 1/2 cup.
Sift into a mixing bowl the sugar, flour, and salt. Blend in the saved 1/2 cup of milk, then gradually add the scalded milk, stirring constantly.
Pour this mixture into the top of a double boiler, put over fire and bring quickly to a rapid boil. Cook 2 minutes. Now set it over the simmering water in the bottom of the boiler.
Cover and cook 5-7 minutes, stirring occasionally. Vigorously stir about 3 tablespoons of this mixture into the egg yolks. Quickly blend this into the mixture in the double boiler. Cook over simmering water 3-5 minutes, stirring slowly all the time.
Fluff up the cooked rice and add it into the hot mixture, then remove it all from the heat.
Stir in the raisins, butter, and vanilla.
Pour up your pudding and after it has cooled a little, sprinkle the top with a mixture of the nutmeg and cinnamon. Makes about 6 servings.
Note: I have usually made this in the microwave. I can't tell you specific settings or time, and microwaves do vary. But if you're like most cooks, you can kind of feel your way through experience.
