Lesley,
In the subject line you specify France but in the text of your posting you mention Europe. So, I am not sure where you are going to be. Sanctuary Wood and Ypres [Ieper] are both in Belgium. If you are going to be in France, not Belgium, and want a Canadian connection the place to go just has to be Vimy Ridge. Genuine trenches there, too - and tunnels!
