excuse me that I come into your discussion, but the spelling of the Hofmann's name is rather a qustion of the region, where the person lived, than of the religion. There is no jewish, catholique or protestant spelling. If you go to www.verwandte.de, you will see, that the name Hofmann apears mostly in the southern part of Germany and the name Hoffmann in the northern.
