Brown Sugar Pie
Brown sugar pie is a basic pie from Quebec, Canada. In French, it is Tarte
au SucreBrun. Delicious!! Prep Time: approx. 30 Minutes. Cook Time
approx. 30 Minutes. Original recipe makes 1 Pie ( 8 servings). Recipe has
been scaled to make 8 servings.

1/4 cup and 2 tablespoons all-purpose flour 2 cups packed brown sugar
1-1/2cupsevaporated milk 1/4 cup butter 1/2 teaspoon salt 1 teaspoon
vanilla extract
Directions
1 Preheat oven to 400 degrees F (200 degrees C).
2 In a saucepan, combine flour and sugar. Stir in milk, butter, salt and
vanilla.Cook, stirring constantly, until mixture comes to a boil. Pour into
an unbaked pie shell.
3 Bake at 400 degrees F (200 degrees C) for 5 minutes. Reduce heat to 350
degrees F (175 degrees C) and continue baking for 25 minutes.

Subject: [HS] Sugar Pie
I recently returned from a trip to Quebec City where I tasted a delicious
Sugar Pie that I think is made from Maple Sugar. It tasted like a
combination of butterscotch and caramel flavors with a maple syrup
overtone. It was baked with a double crust.
Of course, the restaurant would not part with the recipe! Does anyone
know of this Sugar Pie?
P.S. It did not taste like molasses pie, which I was already familiar
with.
