Many of you wrote in to ask about yeast extract, an ingredient in a
recent recipe for Onion Pie. Yeast extract is common in England and
Australia. Name brands for yeast extract include Marmite and Vegemite.
It has a very strong savory flavor, almost meaty, and the Australians
swear that Vegemite on toast can cure a hangover. You might be able to
find it in the gourmet or international sections of your local grocery
store. It is not absolutely essential to the Pie recipe. If you can't
find it just leave it out or substitute the same measure of granulated
beef or chicken bouillon.
