Freezing persimmons??...They can be frozen and are very good, but still a little messy to eat if holding them.

When they very very ripe...at their peak...Just take them rinse them, let them dry off on the outside...(leave them out on the counter). When they have dried off, I put mine on a flat cookie sheet, or a flat pan...put them inside the pan...put it in the freezer, skin and all, until they are frozen solid. After that I put them in plastic bags that will protect the flavor and freezer burns and they keep a very long time.

When you get ready to eat them...hold them under very hot water for a couple of minutes and all the peel just slips right off. They can be put into a sherbet dish and eaten with a spoon ...or if one is at home by yourself, just hold a paper towel around it, stand over the sink, and enjoy. :-)
