This fudge is quick and easy, besides yummy! It's a good choice for
the upcoming holidays, but appropriate for anytime you crave
fudge!
Cranberry Fudge
2 cups (480 ml) semisweet chocolate chips (12 oz/336 g)
1/4 cup (60 ml) light corn syrup
1/2 cup (120 ml) powdered sugar
1/4 cup (60 ml) evaporated milk
1 teaspoon (5 ml) vanilla extract
1 (6 oz/168 g) package sweetened dried cranberries (such as
Craisins)
1/3 cup (80 ml) chopped walnuts or pecans, optional
Line the bottom and sides of an 8-inch (20-cm) square baking pan
with plastic wrap; set aside. Combine chocolate chips and corn
syrup in a medium saucepan. Cook over low heat until melted and
smooth. Remove from heat. Add powdered sugar, evaporated milk
and vanilla; stir vigorously until the mixture is thick and glossy. Add
cranberries and nuts; mix well. Pour into prepared pan. Cover and
chill until firm, about 8 hours. Cut into 1-1/2-inch (3.75-cm)
squares. Store covered in refrigerator. Serve at room
temperature.
Makes 25 pieces.
