This recipe is very similar to a German gingerbread that I make - it calls for 1 cup hot water (no mention of coffee), so you should be safe just using hot water, though the flavor will not be as dark as with coffe.

There is no substitute for coffee. Coffee is nectar of the gods, second only
to good Irish whiskey or stout. You must use the coffee, your eyelids are
getting heavy, use the coffee. And no decaf, either. :-)
Seriously, I haven't made this recipe, but from looking at the ingredients,
I would think the coffee taste is mingled in with the spices and molasses
and stuff. You might be surprised at the taste. It would certainly be worth
a try. If you really can't stand the coffee, I would just put in water, or
maybe some good Irish tea. Coffee is almost entirely water anyway, just with
flavor. Oh, that flavor.
Now, I wonder how it would taste with a cup of Guinness instead of the
coffee?
