Now this only pertains to Catholic baptisms, but are sponsors/witnesses not
the same as godparents? It would seem that you would want adults to be the
child's godparents, because I thought one of the traditional roles of the
godparents (besides supporting the child in the faith) was to take responsibility
for him or her in case something happened to the parents. Of course, that
would not legally hold up these days.

This is what I was told as a child--my godparents were my dad's first cousin
and her husband, our most closely related Catholic couple in the family. My
mom converted from the Lutheran church, so her sisters, brothers and their
families were not considered as candidates. I believe at least one has to be
Catholic, the other a baptised Christian?

I guess I was a greedy child--loved those birthday, first communion and
confirmation checks from the godparents!
