A marriage would generally have taken place in the bride's church. That might have been her place of birth or where she was residing at the time of her marriage. She or the groom could have been born anywhere.
Griffiths Valuation wasn't a census. It was a property valuation which would eventually result in a tax levy to pay for the Poor Laws in Ireland. It didn't include everyone. Not all property was included in the Valuation. Many properties were exempted. Others weren't valued high enough to be included in the Valuation. The detailed Griffiths Valuation includes lessor and occupier. The lessor could have been the person who owned the property or just an representative of the owner. The lessors address is included in the detail. The occupiers may have been renting the land just for farming as many did and not lived there. Or the lessor and occupier may have both been the same person and if a dwelling is included on the property in all probability lived there. If the property was an office, it may not have been the residence.
Griffiths Valuation doesn't include any family information, ages, dates of birth, family relationships, etc. If you're going to search Griffiths, you should search for the detailed records and not an online index database. The Index was prepared in the mid-1950s nearly one hundred years after Griffiths was completed.
You can access the detailed Griffiths Valuation records online at irighorigins.com which is the website used at the National Library of Ireland.
If after researching the detailed Griffiths Valuation records you find that there is a strong indication from the detailed records the Carrolls listed there lived in Fennor, Fennor, Westmeath is in the civil parish of Rathconnell. That's the RC Parish of Mullingar. Mullingar RC Parish is a large one including the civil parishes of Rathconnell, Portloman, Mullingar, Moylisker, Lynn and Carrick. The Mullingar RC Parish registers are available on microfilm back to 1742 (with some gaps) to 1880 on order through a LDS Family History Centre, film #0926178 but verify that number with LDS before ordering the microfilm. Dunne/Dunn is a very common surname in Ireland. Carroll/O'Carroll too is very common.
The Dun na Si Heritage and Genealogical Centre has access to Westmeath records county wide and can research for you on a fee basis.
