Mary,
Red beans and salt pork sounds good to me. I ate a lot of beans while growing
up in the hills. Pintos, navy, lima, kidney, butter and different varieties of
green beans. Almost all was cooked with what is now known as "salt pork" or a
ham hock. My granny strung beans on sewing thread and dried them on the back
porch, then would put them in an old pillow case for use during the winter
months. We called them "leather britches". Had to soak them in water for a
whole day to get them ready to cook with a hunk of "salt pork". Sure were good!
I still would like to know what "greasy beans" are. Someone out there surely
must know.
