Officers during the Civil War engaged servants to cook, clean and otherwise
serve them. These functions were sometimes fulfilled by slaves in the case
of southern officers, and by freed slaves and colored troops in the northern
armies. Soldiers might be hired in this way to be the man-servant of an
officer. Hope this helps.
