Hello All,

Here is a great recipe for all that left over turkey, it is also a Kentucky
tradition.

THE KENTUCKY HOT BROWN SANDWICH
SERVES 6

INGREDIENTS:

6 TABLESPOONS OF FLOUR
1/2 STICK OF BUTTER
3 1/4 CUPS OF MILK
1 EGG (BEATEN)
6 TABLESPOONS OF A GOOD QUALITY PARMESAN CHEESE
1 OUNCE OF HEAVY CREAM (WHIPPED)
SLICED TURKEY BREAST (COOKED)
12 SLICES OF BACON (COOKED)
12 SLICES OF TOAST
SALT & PEPPER
ADDITIONAL PARMESAN CHEESE

DIRECTIONS:

MELT BUTTER IN A LARGE SKILLET OVER LOW HEAT. ADD FLOUR AND STIR UNTIL THE
FLOUR IS ABSORBED. STIR IN THE CHEESE AND MILK; ADD THE BEATEN EGG. DON'T
LET THIS BOIL! STIR UNTIL ALL INGREDIENTS ARE COMBINED. REMOVE FROM THE
HEAT AND GENTLY FOLD IN THE CREAM, ADD SALT & PEPPER TO TASTE.

FOR EACH HOT BROWN:
PLACE TWO SLICES OF TOAST ON AN OVEN PROOF DISH. PLACE TURKEY SLICES ON
BREAD, LADLE SAUCE TO COVER TURKEY. SPRINKLE WITH THE ADDITIONAL CHEESE AND
PLACE UNDER THE BROILER UNTIL IT IS BUBBLING AND SPECKLED BROWN. REMOVE FROM
THE BROILER AND CROSS EACH HOT BROWN WITH TWO STRIPS OF BACON. SERVE RIGHT
AWAY.
