Many of the finer houses had external kitchens. Buildings apart from the
house to reduce the danger of losing the whole house to a kitchen fire.
A few of these external kitchens had tunnels to the main house. I believe
the Cassius M. Clay house [White Hall State Shrine] has this feature. He
was a notorious abolitionist but never broke the law by helping slaves
escape. The story is told they would send servant children through with
the food, but they had to sing as they went so the adults could be sure
they weren't sampling the food as they walked. My ancestor's 1840 home
had an external brick octagon kitchen, but no tunnel.
