This is taken from "The Joy of Cooking" Stir over slow heat until sugar is
dissolved:
3 cups of light brn. sugar
1 cup water or 1/2cup water and 1/2 cup light corn syrup
1 Tblsp. vinegar
Cook these ingredientsquickly to the soft ball stageof 238`. whip until
stiff:
2 egg whites
1/8 teaspoon salt
pour the syrup over the eggs in a thin stream . Beat them constantly. Place
the bowl containing the candy over ,not in, boiling water and beat the candy
until it is thick and creamy.
Add:
1 teadpoon vanilla
1 cup broken nut meats
Pour the candy onto an oiled platter. Cut into squares while it is hot.
(I don`t remember my mother always using the double boiler (though, sometimes
I think she did) She usually dropped hers from the spoon onto waxed paper ..
If you don`t want nuts in the candy you may put a pecan half on top of each
piece.
Here`s something else:
She used to make a very rich Devil`s food cake and spread seafoam icing on
the layers then smear dark chocolate (sweetened with just a little sugar )
in the choc. and maybe a tiny bit of butter in it also)on top of the sea
foam. Wow! good!
